Waffle - 4 1/2 C. flour
little salt (they never measured)
Cut in 4 1/2 sticks unsalted butter. When butter is well cut with flour, in separate bowl mix:
3 eggs
4 1/2 Tbs water
then add to the flour mixture. Mix well. Put in refrigerator for 5-7 hours or overnight. Next day, divide dough into 8 to 10 pieces. Roll out each piece very thin to around 11 inches and bake in 375 to 400 degrees for 20 minutes on cookie sheet until light golden brown.
Cream - 3/4 C. flour
1/2 C. sugar
2 C. milk
Mix all together and cook on low-medium heat until it gets a little thick.
Mix........2 eggs and put in mixture of flour and milk. Mix well and set aside until well cooled.
Then whip..2 boxes sweet whipped butter
3/4 C. sugar
4 egg yolks
Once it is whipped together, put into the flour and milk mixture which should be almost room temperature. Mix well. Then add:
1 Tbs. brandy extract
1 Tbs. orange extract
1 Tbs. vanilla extract
1 Tbs. lemon extract
Rind from 1 lemon
lemon juice from 1 lemon
1-2 jiggers (1 1/2 oz each) of V.O. or any other good whiskey
Mix all ingredients together.
Spread thinly between layers leaving some for top and sides. With sharp knife, cut cake to shape it round, saving the crumbs. Spread remaining cream on the top and sides. Sprinkle the top with the saved crumbs. Decorate top with a few thin twisted orange slices.
Recipe can be increased to 1 and a half the ingredients to make a taller, more dramatic torte. Well worth the time and effort. Labai skanu!

When we first posted the recipe for Kugelis 26 February we had no idea that it would result in so many responses and Emails. It seems that what is in question is the origin of Kugelis. Some say that the origin of Lithuanian Kugelis is from Kugel which is a very popular traditional dish of the Jewish Faith with the only difference being that Kugelis is with meat and Kugel is without. To compound the issue there is the very old traditional Lithuanian dish called Bulvių Plokštainis whose recipe is absolutely identical to Kugelis. We would like to highlight this recipe for a number of reasons. One reason is that no matter what you call it or where it came from it is a delicious and easy to make dish. The other reason is that we think it would be very interesting to find out from our dear readers any input they could share in regards to the origin of these three dishes – Kugel, Kuglis and Bulvių Plokštainis |

Lithuania is steeped in traditions. It would be difficult to think of any part of daily life, family events or holidays where age old traditions are not practiced. Included in these are the time honored traditions that are practiced at the table. Yes, even sitting at the table to enjoy your meal is something that involves traditions practiced for generations by Lithuanian people all over the world.
To start, there is the order of seating. The father sits at the end of the table. Now the end he sits at is important to note also. He sits at the end of the table that is near the wall not the end that faces the open room or the door. The eldest son sits at the father's right, while the other men sit next to the son along the wall. Women sit across from the men and the mother sits at the opposite end from the father. This traditional seating is maintained especially during holidays, when the entire family gathers together.
